Small-Batch Frosted White Chocolate Chip Cookies

Note: Be sure to allow the butter and egg to come to room temperature before beginning.

Cookie Ingredients:

  • 5 tbsp (70g) unsalted butter, softened

  • 3 tbsp (45g) granulated sugar

  • 3 tbsp (45g) light brown sugar, packed

  • 1 large egg yolk (18 g)

  • 1 tsp (5g) vanilla extract

  • 1 cup (120g) all-purpose flour

  • ¼ tsp (1.5g) baking soda

  • ¼ tsp (1.5g) baking powder

  • ¼ tsp (1.5g) salt

  • ½ cup (90g) white chocolate chips or chunks

  • Optional: 1 tsp (3g) cornstarch for thicker, softer cookies

Frosting Ingredients:

  • 4 tbsp (56g) unsalted butter, softened

  • 1 cup (120g) powdered sugar

  • 2–2½ tsp (10–12g) almond milk

  • ½ tsp (3g) vanilla extract

  • Pinch (0.5g) of salt, optional (counters the sweetness)

Instructions:

  1. Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar for 1–2 minutes until pale and fluffy.

  3. Mix in the egg yolk and vanilla until smooth.

  4. Add the flour, baking soda, baking powder, salt, and cornstarch (if using). Mix on low until the dough just comes together.

  5. Fold in the white chocolate chips.

  6. Scoop into 6 dough balls (about 55–60g each). Place on the prepared baking sheet.

  7. Bake for 8–10 minutes, or until edges look set and centers appear slightly underdone.

  8. While the cookies bake, prepare the frosting by beating all ingredients together until light, smooth, and creamy. Add a splash more milk if needed for a softer consistency.

  9. Allow the cookies to cool on the pan for 10 minutes, then transfer to a rack to cool completely before frosting. Optional: Decorate with your favorite festive sprinkles.
