Gingerbread Caramel Swirl Cookies

There’s something magical about the smell of warm spices drifting from the oven on a chilly day. These soft and chewy gingerbread cookies capture that feeling perfectly - sweet, spiced, and just the right amount of cozy. Each bite delivers the nostalgic comfort of classic gingerbread, but with a lighter, sugar-free twist. Topped with fluffy vanilla frosting and a swirl of caramel, they’re the kind of treat that feels special enough for the holidays yet simple enough to bake on a quiet weekend.
Note: Be sure to allow the butter, egg, and almond milk to come to room temperature before beginning.
Cookie Ingredients:
½ cup unsalted butter (room temperature)
½ cup Pyure Organic Brown Sweetener
1 large egg (room temperature)
1 teaspoon vanilla extract
3 tablespoon molasses
1 & ⅔ cup all-purpose flour
2 teaspoons corn starch
½ teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon cinnamon
1 tablespoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon salt
Frosting & Topping Ingredients:
½ cup unsalted butter (room temperature)
3 cups Pyure Organic Powdered Sweetener Stevia Blend
1 teaspoon vanilla extract
2-3 tablespoons unsweetened vanilla almond milk (room temperature)
Topping: Pyure Organic Caramel-Flavored Syrup
Instructions:
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In a mixing bowl, cream the butter and brown sweetener together until light and fluffy.
Add the egg, vanilla extract, and molasses, and mix until smooth.
Gradually mix in the dry ingredients: all-purpose flour, cornstarch, baking powder, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Stir until fully combined.
Using a 3-tablespoon cookie scoop, portion the cookie dough into balls. Place the dough balls on the prepared baking sheet, spacing them about 3 inches apart, and gently flatten to about 1-inch thickness.
Bake for 12 minutes. Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a cooling rack to cool completely.
While the cookies are baking or cooling, prepare the frosting by blending all the frosting ingredients together until smooth and your desired consistency is achieved.
Once the cookies are fully cooled, spread or pipe the frosting onto each cookie.
Using the tip of an offset spatula, swirl a small amount of Pyure Organic Caramel-Flavored Syrup on top of the frosting.
